Ingredients and % cacao

IgnaFire chocolates boast all natural ingredients and our recipes are very simple. They also contain much less sugar than other Mexican-style chocolate. A note about cacao percentages: many chocolate labels expose a high % of cacao solids, but be aware that some of this proportion comes from added cocoa butter (read the ingredients list!). IgnaFire chocolates have all the natural cocoa butter of the bean (which is 50–53% of the bean), with none taken away, and none added.

50%. It is often said that a truly fine dark chocolate contains at least 50% ingredients from the cacao bean. All IgnaFire chocolates carry this distinction. For our genuine cacao flavor, the only ingredients are ground cacao beans and sugar, with a 50% cacao proportion. Our Moka flavor shares this same proportion of cacao (50%), and it also has just enough coffee beans added for a moka delight.

66%. The Cinnamon and Vanilla flavors of IgnaFire chocolates contain 66% cacao beans, making an even darker chocolate treat. The remaining ingredients are sugar, and either natural vanilla or cinnamon.

Theobromine (and caffeine)

Contrary to popular belief, chocolate actually contains very little caffeine. However, chocolate contains a larger percentage of theobromine, which has a similar molecular structure to caffeine and it is believed to have similar physiological and pharmacological effects. Nonetheless, the actual effects on the body are not completely understood and more study is needed.

Flavanols

Cacao beans are naturally rich in a compound called cacao flavanols. Flavanols (along with a different compound called flavonols found in fruits and vegetables) are both members of a family of compounds called flavonoids, which are believed to have antioxidant properties. In addition to potentially providing antioxidant effects (possibly reducing LDL cholesterol oxidation), diets rich in cacao flavanols are also thought to contribute to a healthy cardiovascular system by improving overall blood flow and decreasing risks of clotting. Be aware, though, that most conventional chocolate processing destroys these precious cacao flavanols. IgnaFire chocolates are unprocessed and therefore, preserve the generous proportion of antioxidant compounds naturally produced in cacao beans.
